1. Pruning
Generally the vine is pruned at the end of the winter, between February and March in order to avoid the periods of frost. The goal is to keep only the most fertile buds, that is to say those that appear on the one year old wood. We use long Guyot pruning to achieve a uniformity in the production that is both high in quality and well-regulated in quantity.
